Can you play this game without the "weapons" cards, and "murdering" a guest?

You can, but it would not be my recommendation, as the weapon cards and the threat of murder become a HUGE part of the scheming and plotting at the party. Weapon cards become VERY valuable objects. If you remove this portion of the game, then you will be removing some of the enjoyment of the party.
