1920's Classic Barbecue Sauce Recipe
Ingredients
~ 1 tsp Brown Sugar
~ 1 tsp Chili Powder
~ 1 tsp Black Pepper
~ 1 tsp Salt
~ 1/4 tsp Cayenne Pepper
~ 1 Tbs Worcestershire Sauce
~ 1 cup Hot Water
~ 1 Onion, small - minced
~ 2 Garlic Cloves - minced
~ 2 Tbs Vinegar (most likely Cider)
~ 1 Tbs Flour
~ 3 Tbs Ketchup
~ 1 tsp Curry Powder
~ 1 tsp Dry Mustard
~ 1/2 tsp Tabasco Sauce
~ Juice of 1 lemon or 2 limes
Directions
Combine all in saucepan. Simmer, stirring occasionally, until blended well.
Pour over, and baste with, pork (ribs were what was written, but would be good over most any cut).
Note: For any other meat, add 1/2 cup butter and/or bacon drippings. Pork does not need the fat (My own feeling on this is, with our new, lean pork, the fat would help. The old timey pork had much more fat than it does now).
